Sound crashes after 45/60 minutes of streaming

I am having serious issues with Voicemeeter Banana.
I have been streaming with a separate streaming system since january or so without any issues. This was until around 3 weeks ago or so, where randomly, the sound that's sent through the capture card via HDMI AND my microphone that's being sent through VBAN to the streaming rig, "crashes"/bugs out - on stream - after roughly 45 minutes/60 minutes of streaming. This is a consistant issue.
I am using Streamlabs OBS to stream to Twitch from my streaming rig, and as far as I can tell, it's only the scenes with the capture card feed enabled that's bugging out. When I switch to a "Be right back"-scene, my microphone is not bugging out, but is performing as expected. It appears to only affect audio coming from my gaming rig (i.e. music playing from my streaming rig is not affected).

I have set the VM input and output as the default devices in Windows (10) and checked the samplerate - 48k all around. My Voicemeeter Banana settings are as follows:

The only thing I can think of at this stage is that Elgato 4k Capture Utility updated the firmware of my capture card a while back. Windows 10 also updated, but I followed every tutorial to make sure nothing had changed with the sample-rates like the issues described in here. I have tried reverting to an older version of the firmware of the capture-card, but I just don't think it's what's causing the issue at this stage.
When the sound "crashes"/bugs out, NOTHING is indicating this on the mixer-view of VM Banana on either the streaming rig or my gaming rig. It appears like the feed is coming through like it should at the gaming rig, when visually monitoring the desktop audio and the microphone levels. I can hear the desktop sound clearly and without any issues through my headphones on the gaming-rig.
Restarting the audio engine doesn't do anything to the issue, but disabling the capture card and enabling it whilst also restarting the audio-engine has about a 1% chance of clearing the issue on-stream.
It is getting really frustrating being told Someone PLEASE help me.
